How to Make Starbucks Copycat Ham & Cheese Egg Bites
I love making these Starbucks copycat ham & cheese egg bites. They are quick and easy and perfect for an on-the-go breakfast. Our kids love them, too!
Ingredients:
- 4 eggs
- 1 red bell pepper
- sour cream
- shredded cheddar cheese
- ham slices (I used deli meat)
- avocado oil spray (any spray that can be used for high heat)
- muffin/cupcake tray
How to Make:
Preheat oven to 350 degrees F. Spray muffin tray with avocado oil spray.
In a separate bowl whisk together 4 eggs really well. Add in 1/4 cup finely chopped red pepper, 1/2 cup of sour cream, 1/2 cup shredded cheese, 3 slices of finely cut up pieces of ham. Whisk all ingredients together well.
Pour mixture into muffin/cupcake tray & fill to about half full. It should fill up all 12 spots. Bake for 12-15 minutes or until top doesn’t look liquidly.
Note: I made 4 sets of “to go” bags with 3 eggs bites in each and they heat up nice and quick in the microwave for a tasty on-the-go breakfast!
